Coffee tastes like coffee right?  Wrong!  This course is all about smelling, tasting and experiencing the world of specialty coffee.  Students begin with a presentation of how coffee, as we know it, is produced; from seed to cup.  They will experience many of the fragrances and aromas commonly (and not so commonly) associated with coffee, participate in an industry standard cup tasting session and learn about how brew ratios affect taste profiles.

*This course is available in two different versions: industry professionals (intermediate-advanced) and enthusiasts (beginner). Please book your preferred option.

Foundation Espresso

Want to kick start your career in coffee? Learn a new skill to go travelling with? Maybe you just love coffee? Our Foundation Espresso course is the place to start.

Coffee is an intriguing and complex product. There is a great deal to learn and love about this humble beverage but understanding its’ intricacies requires a strong foundation to build upon; this is where Dimattina comes in.

With a strong emphasis on consistency, students will gain: a basic working knowledge of coffee as a product, solid dosing and tamping techniques, grinder calibration and extraction diagnostic skills and the ability to steam and texture milk to a high-end café standard.

Students will receive practical training in how to produce all commonly ordered espresso based beverages including espressos, long blacks, flat whites, cappuccinos, lattes and macchiatos. Machine cleanliness and hygiene also receives high emphasis.

It is strongly recommended that applicants complete this course before attempting the more advanced classes.

Latte Art

Ever had a coffee with a pretty pattern on top and wondered just how they do that? This course will show you how. Students learn three basic designs which can be combined into infinite unique and interesting examples of latte art. Milk texturing is paramount in this highly advanced class. The correct consistency and pouring technique can be taught, but only through practice can it be mastered. The first half of this course covers the technique behind the art while the second provides a stress-free environment in which to hone your craft with an experienced latte artist to guide you. Useful for any barista looking to add that extra bit of flair to their craft.

Time Trial

Speed is key in this fast-paced adrenaline pumping class!  Students will be required to demonstrate their skill level through several exercises designed to test even the most experienced baristas.

Participants will learn new time management techniques to help shave those vital seconds off their preparation time.  Organisational skills will be tweaked to suit the individual and their unique workstations through a series of situational challenges.

This course is both physically and mentally challenging and a must for anyone who wants to thrive in a high volume café environment.
