The Konga washing station in Ethiopia’s famous Yirgacheffe region is an old favourite of ours at Dimattina.
We’ve been purchasing Konga’s natural processed lots for several years now and it never ceases to impress. Approximately 600 smallholders contribute to this lot each season, all of whom are trained meticulously to pick only the ripest cherries. They are rewarded for this extra effort by receiving higher prices for their produce. Equally important is the amount of care taken to process the coffee. The drying cherries must be shifted at regular intervals to avoid unwanted fermentation. The result is an ultra-clean, naturally processed lot that gets better year on year. Expect soft blueberry and strawberry jamminess rounded off with a winey finish. Best appreciated as a black coffee.
