This experimental lot from Fadiva micro-mill is a real head-turner!

Costa Rica is fast-becoming known for its experimental micro-lots and unique flavour profiles; this lot from Tarrazu’s Fadiva mill is the first time we’ve encountered the ‘double washed’ process but we’re sure it won’t be the last!  Fadiva was established in 2012 as the latest addition to a chain of farms and mills owned by the Vargas Diaz family. Oscar Vargas heads up operations at Fadiva with his immediate family and has pioneered the double washed process.  Double washing basically takes the traditional washed process and adds a further step by replacing the fermentation tank’s water with fresh water at the 12 hour mark.  The result is a crystal clear cup with vibrant acidity and a fantastic mouthfeel.  Expect notes of white grape, candied orange and cacao; a very versatile coffee, great with or without milk.
