Coffee from Colombia has always been good, often regarded by many to be among the best in the world.  This lot from Finca La Divisa in Buena Vista, Quindio takes it to a whole other level.  Producer Diofanor Ruiz started harvesting exceptional specialty-grade coffee in 2013 and has committed to improving the quality of his coffee year on year.  He has improved his sustainability and overall cup quality by adopting new practices such as planting native trees amongst his coffee, promoting bio-diversity and providing partial shade during the warmer months.  This particular lot, comprised of the exciting new Tabi varietal, has been processed using a method of extended fermentation which involves 48 hours of fermentation with the pulp on and another 48 hours once it’s removed.  This method introduces unprecedented new flavour profiles while allowing the coffee’s natural characteristics to shine through.  In the cup you can expect to find notes of pineapple, dark chocolate, passionfruit, strawberry and brandy.  This coffee is in very limited supply so get in quickly to secure yours today; it won’t be around for long!
