Producer Jhon Monsalve operates out of Genova in Armenia west of Bogota. For the past seven years Jhon has been producing exceptional microlots from his farm La Secreta (literally ‘The Secret’). Using strict ripeness and fermentation procedures, Jhon has managed to build a strong reputation for quality and consistency. In 2014 however, La Secreta was ravaged by leaf rust and Jhon was forced to remove all of his caturra trees and replace them with the hardier (but generally less tasty) castillo variety. This could have been a heavy blow for Jhon but his fears proved to be unfounded when his new castillo cherries exhibited outstanding flavour and complexity. In the cup you can expect to find notes of mandarin, raspberry and a crisp Riesling-like finish. Monsalve is a very bright and juicy coffee, ideal for a filter or black espresso style.
